Good morning! Every now and then, it's fun to have a sweet breakfast in contrast to the usual "running out the door, don't have time for anything but this head of kale" (that isn't quite the norm, but you get the idea). So spoil yo-self! These tasty mini doughnuts take no time at all, plus you won't feel guilty! Their practically health food! Emphasis on practically.
This isn't listed as one of the ingredients, but a cat dress really adds to the breakfast experience. Something about that feline print...

Mini cake doughnuts! These beauties have been a breakfast favorite of ours for quite a few years now, especially considering how easy they are to make in comparison to their fried fellows!
- Vanilla -
- 1 1/3 cups flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 cup milk
- 1/4 cup coconut oil
- 1/4 cup Greek yogurt
- 1 egg
- 1 1/4 teaspoon vanilla
1. In a bowl, whisk together the flour, sugar and baking powder.
2. In a separate bowl, combine the remaining ingredients.
3. Mix the contents of the two bowls together-
Being sure not to over mix.
4. Pour the batter into a piping bag, and pipe the batter into your Doughnut Maker.
5. After cooking for about 3 minutes check to see if your doughnuts are a nice golden brown, once you have reached the desired color, carefully take them out to cool.
6. Once they have cooled completely, it's time to decorate! You could use anything from buttercream to powdered sugar, or for a spiced variety: dip your hot doughnut in a cinnamon and sugar mixture!
- Chocolate -
- 1 1/4 cups all-purpose flour
- 1/2 cup cocoa (for an even better flavor, use DARK cocoa)
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 egg
- 3/4 cup buttermilk
- 1/4 cup coconut oil
- 1 1/4 teaspoon vanilla
Same directions as the Vanilla doughnuts. Ta Da! Simple and sweet!
Pair this lovely breakfast with your favorite herbal tea, for a glorious start to your morning! Yes, that is a kitty tea pot.
